From my Changing Everything plan…..
4 omega-3 eggs 4 dates, chopped
2 tbsp. olive oil 2/3 cup water
1 diced apple 1 cup berries
1 scoop protein powder ¼ cup chia seeds
1 teas. cinnamon ½ teas. nutmeg
½ cup shredded coconut ½ cup flax meal
½ cup almond flour
Preheat oven to 350 degrees
Line 12-muffin pan with paper baking cups
Add eggs, chopped dates, olive oil, water, and half of the diced apple to blender. Blend well.
In large bowl, combine all dry ingredients, and half of the diced apple.
Add ingredients from blender, stir to combine. Add berries.
Spoon batter into muffin cups. (May want to use an ice cream scoop)
Bake for 25 minutes. Cool on rack.
Store in refrigerator, or freeze. Before eating, warm in microwave, if desired.
